Even though summer is winding down, I still have summer-inspired recipes for y’all.

The best one is still coming.

For today we’re keeping it simple, clean and fresh.

I made this dish the night I also made sauteed swiss chard & kale with fig.

Cucumber & Blueberry Summer Salad with Homemade Blueberry Vinaigrette

Ingredients, salad

  • cucumber, 2
  •  mint, 1 tsp.
  • dill, 1 tsp.
  • blueberry, 1/2 c.

Ingredients, dressing

  • blueberry, 1/4 c.
  • white balsamic vinegar, 2 tbsp.
  • olive oil, 1/2 tbsp.
  • sea salt, pinch

Instructions

  1. Peel, de-seed and slice cucumbers
  2. Place all salad ingredients in a bowl
  3. Mix together (in a small blender if you have one) the dressing ingredients
  4. Pour the dressing over the bowl filled with salad ingredients
  5. Mix together with a large spoon
  6. Add a little more sea salt (if desired)
  7. Chill in the fridge until you are ready to serve
